BASIC STIR-FRIED MEAT AND VEGETABLES:
Serves two to three persons but can be doubled or re-doubled for more servings, please adjust the sauce quantities too.
THE INGREDIENTS FOR STIR FRYING:
One-half pound chopped or ground meat, seafood or tofu
Two to three cups (about 1/2 to 3/4 pound trimmed or 3/4 to 1 pound untrimmed) chopped fresh vegetables
Examples of meat, seafood, or tofu include sliced beef steak such as sirloin, round, rib-eye, flank, or tri-tip; diced chicken breast or thigh meat; sliced pork tenderloin; any ground meat or sausage; small whole shrimp or scallops, cubed firm fresh fish such as salmon or halibut, or cubed firm tofu.
Leftover cooked meats can be used, just reduce the cooking time to 1-2 minutes.
THE PROCEDURE FOR STIR FRYING:
Make stir-fry sauce using the Basic Stir-Fry Sauce below.
Stir-fry meat and vegetables: Heat a wok over high heat for one to two minutes on your American stove. Add two teaspoons oil and heat until hot but not smoking, just about one minute.
Then add meat or seafood. Using a large spoon stir and cook for two to four minutes until the meat changes color.
Add vegetables and stir and cook for one to two minutes until vegetables are tender-crisp and meat is cooked through.
Add stir-fry sauce. Before pouring sauce over cooked meat and vegetables, stir it again until well combined. Pour stir-fry sauce over meat and vegetables. Toss ingredients with the sauce over high heat for one to two minutes till the sauce thickens.
From start to finish, cooking a stir fry should take three to six minutes.
THE BASIC STIR FRY SAUCE: Makes one and one fourth cups sauce
One tablespoon cornstarch
Three fourth cup water, sherry or white wine, chicken stock, or any combination of these liquids
One fourth cup soy sauce
You may also substitute up to one-fourth cup of the water with any bottled sauce such as bean sauce (any style), hoisin sauce, hot chili sauce, fish sauce, oyster sauce. If using strongly flavored bean paste or fish paste, start with just one tablespoon. Note that you can also change the flavor of your stir-fry sauce by using different types of soy sauce.
In a small mixing bowl, begin adding cornstarch and your liquid, like water. Using a small whisk or fork, pour in the liquid in a slow stream, stirring constantly until mixture is smooth.
Add soy sauce and any other flavorings and stir until combined.
Set sauce aside while you stir-fry meat and/or vegetables in a wok or skillet.
When all ingredients are cooked, pour in the sauce and stir until the sauce thickens.
Serve hot with hot steaming rice.
