So what makes Carrot Cake so unbelievably wonderful?


What’s your favorite most cake in the entire world? Go on, have a little ponder now and then come back. Right, got it? What is it? Cheesecake? Pavlova? Sponge? Chocolate? Well, If it happens to be Carrot Cake then let’s just say you’re in luck as this entire article is dedicated to that exact cake with easy to make carrot cake recipes included!.

So what makes Carrot Cake so unbelievably wonderful? Well, firstly it’s the only cake that’s good for you. OK, that’s a little lie but hey, it has a carrot in so It at least gives you 1 of your 5 a day!! And that has to be at least a little good for you!

Then you’ve got the delicious nuts, the creamy icing and inner-layer, the soft, moist sponge and of course that optional little kick of cinnamon to top it all off. Hungry yet?

It’s actually quite a difficult task to create the perfect carrot cake as there’s a range of varying ingredients that all need to be treated differently and added at different times. Just because you’re amazing at making the softest sponge doesn’t mean you’re cream-cheese topping will come out just as perfect. I found this out myself a few months ago when I decided to home-baked my very first carrot-cake….without using an easy to make carrot cake recipe!

It all started out perfectly, I had all the ingredients needed and everything was looking (and tasting) pretty great. Then, of course, the sponge was too dry, the cream-cheese topping wasn’t the right viscosity and after an attempted bake, it turned out to be more of a diamond shape than a square. It still tasted OK but boy did I learn a lesson; never make a cake without a little research beforehand.

So, to make sure none of you make the same mistakes I have here’s a great and accurate recipe for an easy to make carrot cake. Here’s hoping yours turns out better than mine!

To Cook easily to Make Carrot Cake you will need:
350g plain flour
300g carrot, finely grated
250g butter
300g soft brown sugar
4 eggs, beaten
2 teaspoons cinnamon (optional)
1 teaspoon mixed spice (optional)
1 level tablespoon baking powder
zest (grated) and juice of 1 lemon
250g almonds (finely ground)
The icing for easy to make Carrot Cake
250g cream cheese
200g icing sugar sifted
Zest (grated) and juice of 1 orange
60g chopped walnuts

A method for Easy to Make Carrot Cake:
Preheat the oven to gas mark 4 / 180°C
You will need 1 x 12 inch / 30cm lighted greased cake tin
Mix the butter and sugar together until light and creamy. While continuing to mix, slowly fold the eggs into the mixture.
Mix the flour and baking powder, spices, a little salt. Slowly fold into the butter, sugar and egg cake mixture. Once smooth, gently add the carrots, ground almonds and juice and zest from the lemon.
Pour the mixture into the cake tin and, using a spatula, spread flat. Bake for approx 1 hour, Prod with a thin wooden skewer, which should come out clean, to see if your easy to make carrot cake is ready.
Remove the easy to make carrot cake from the oven and stand to cool for 5 minutes. Remove from the tin and stand on a cooling rack. Allow the cake to completely cool before adding the frosting.

Frosting for easy to make Carrot Cake:
Sift the icing sugar. Mix the cream cheese and icing sugar in a bowl and stir well. Continue to mix until smooth Add 1 tablespoon of the orange juice and the zest. Spread evenly over the easy to make carrot cake. To top off your cake gently sprinkle the chopped walnuts over the icing.

Keep refrigerated
